AppleTV instead of AirPort Express?

Can I use the AirPort Express to stream iTunes music to a home theater system, WITHOUT the need of a TV?
I would be using a Digital (optical) Out cable to connect the home theater system and the AppleTV.

You need to connect the apple TV to a monitor/TV, otherwise you can't see the user interface!! (How do you plan to select what music to play?)

Logitech and Sonos have audio-only products, with clever remotes to select music using the remote only.
